The director of the Chair of New Green Transition at the University of Valencia, Aurora Pedro, participated from June 5 to 11 in a study trip to Crete (Greece) shared with a group of university students from the University of Wisconsin (USA), with the aim of knowing the experience of Greece in the field of gastronomy and sustainability, a case of special interest in the Mediterranean context.
The Chair has proposed developing a project within this initiative of Crete’s Culinary Sanctuaries.
Throughout this study tour, students met with more than 20 resident specialists and participated in presentations and guided tours of archeological and historical sites; nature reserves, organic farms and vineyards; traditional villages and taverns and artisanal food production facilities. In addition, they took part in several clearly different demonstrations or cooking classes with fresh, local and organic ingredients.
